Lovely Thai Salad

Whenever I am craving Asian influenced cuisine, I go straight to the drawer of take-out. However, last night I decided to tackle Thai, and not by phone.

This salad could not have been more simple or delicious.
You really only need one thing. One magical little bottle.

Archer Farms Thai Peanut sauce.

I marinated the chicken tenderloins for about 2 days.
Then, while the chicken was cooking, I combined 2 Tablespoons of the Magical Sauce with a dash of olive oil, white wine vinegar & sugar. Just enough to thin and convert the marinade into a dressing. The salad portion consisted of a mixture of Spring Mix lettuce and 1/2 cup of Asian Slaw from H.E.B.
Finally, I added some clementine slices because I love fruit in my salad.

There you have it, a simple and delicious

I love this group of musicians, so I was beyond happy to find their Christmas album.

Lovely Wedding Flowers:

During the craziness that has been my life this past month, a friend asked me to create her wedding hairpiece*. So, one weekend, inspired by my last "calm" weekend before election day, I created three options for the bride.

*Disclaimer: I've been asked by other friends to create their wedding hairpieces. However, I have said "No" because of one factor, the veil. Due to the nature of my job, it was hard enough to carve out time to make what I know...simple fabric flowers...let alone learn something new...a big pressure veil. Basically, I have run away from veils like a kid runs away from a clown. There is nothing wrong with them, I'm just terrified. There I said it.I'm scared. Let the record show that in the future, when I am not working 11+ hour days, I will face my fear and tackle the birdcage veil.
