
I'm a vegetarian. There I said it, this Texadelphia, Sesame Chicken, BBQ loving gal is a vegetarian...at least for the month of January. Without going into too much detail, my minor lifestyle hiatus can be boiled down to health. Imagine this as a detox for the mind & soul.

After a long trip to the grocery store, I created my first veggie dish:
Spaghetti Squash with Garlic Sage...de-li-cious!
{Step 1: Buy yourself some spaghetti squash. Good rule: 1 squash feeds 4 people}

{Step 2: Chop the squash in half and remove guts & seeds.}

{Step 3: Place squash face down in a dish (or whatever is lying around the boyfriends apartment) and bake at 375 for 40 min. Add a tiny bit of water to the pan. After 40 min. flip to reverse side and place back in oven for 20 min.}

{Step 4: Sauté 1-2 tablespoons Olive Oil, 4 cloves of garlic & 1-2 tablespoons of butter in pan for a 3-5 minutes. Then add in a few sprigs of chopped sage.}

{Step 5: Remove squash from oven and fork through to create the "noodles". Add spaghetti squash to your pan of garlic sage sauce. Mix everything together, then plate.}

{Step 6: Sprinkle with fontina cheese, cayenne, salt, pepper & enjoy!}
Overall, I loved this dish. When researching the best way to bake spaghetti squash, there were a few different options. I chose to base my first experience off of a blog that never fails me, Jeremy & Kathleen. Can't wait to whip this up again!
